- 400g/14oz of Emmental cheese
- 500g/17½oz of quince paste
- 2 eggs
- Oil for frying
Cut the quince paste and cheese into fairly thin slices and make “sandwiches” by placing one slice of cheese between two of quince paste. Beat the eggs while heating the oil, and coat the “sandwiches” in flour. Dip them in the beaten egg and then coat them with breadcrumbs. Fry in the pan until golden brown.
Place the fried slices in a bowl or dish and sprinkle a little cinnamon or sugar on top. You can also garnish them with redcurrants or mint leaves before serving.
